FSSAI / Food License
The one licence no food business can legally skip.
The FSSAI licence — issued by the Food Safety and Standards Authority of India — is the single most important approval a restaurant needs before it can legally serve a plate of food.
What this licence covers
Every entity in India that manufactures, stores, distributes or sells food — from a roadside cart to a multi-city restaurant chain — has to be registered or licensed under the Food Safety and Standards Act, 2006. The FSSAI licence is how the authority keeps track of who is handling food, and holds them to a baseline of hygiene, sourcing and labelling standards.
Which category you fall into — Basic Registration, State Licence or Central Licence — depends on your annual turnover and the scale of your operation. Most standalone restaurants sit in the State Licence bracket, but the threshold changes as you grow, add outlets, or start supplying to other businesses.
Operating without a valid FSSAI licence, or letting one lapse, is treated as a food-safety offence and can mean the business is shut down mid-service — not a risk worth carrying into a launch or a renewal cycle.
